Spatchcock turkey on my Timberline seasoned w Honey Hog looking mighty fine. Spatchcocking (removing the backbone with a pair of kitchen shears & laying flat) is a great option. You can cook at a higher temp for crispier skin and it presents awesome!

It’s almost time for the summerfruit harvest to begin in earnest, and we thought we’d give you a leg up with this delicious, healthy grilled nectarine and apricot salad from It might be a bit soon to see apricots in the supermarket, but it’s never too early to plan your summer BBQ! Find the recipe on their website, or see it below. http://www.5aday.co.nz/recipes/grilled-nectarine-and-apricot-salad/ Serves: 8 as a side Preparation: 10 minutes Cooking: 5 to 10 minutes Ingredients 4 Nectarines, halved and stones removed 4 Apricots, halved and stones removed Handful fresh mint Juice of 1 lemon ¼ cup pumpkin seeds 8 slices prosciutto 3 handfuls of salad greens (we used baby spinach and rocket) Olive Oil Method Grill fruit cut side down on the BBQ or a griddle pan for 5 minutes or until they have softened and have charred lines On a serving platter place salad greens, then prosciutto slices (we bunched these up), grilled fruit and top with pumpkin seeds and mint leaves Squeeze over lemon Refrigerate until ready to serve food
